We started a brand new adventure in Montreux, Switzerland with the teaching team from the Glion Institute, and Chantal Wittmann, MOF maître d’hôtel, in particular. We spent a whole day with them, talking to them about our knowledge of Arts de la table (tableware and decorative arts). We naturally discussed past habits as well as European table setting trends, current equipment and materials and their upkeep. We finished by staging a mini table setting competition to get down to basics with their students.
Such a direct, pragmatic and practical approach is quite rare at this high level, yet after a few weeks of putting it into practice in their restaurant, the results were quite impressive. The school has a very high quality teaching team, is particularly open-minded and all its 100 or so students are seriously motivated. We’ll definitely be going back to the Glion Institute soon.
